I have just recently been to Tokyo. As you may or may not know There are 2 types of Sake, cheap Sake which you drink Hot. and Good Sake which you drink COLD.

I have discovered that cold is the way to go when its good. I also discovered from the airline stewardess how to know. Ginjo or DaiGinjo styles are served cold.

This was very helpful because my radar allowed me to find a Sake bar that the locals didnt know existed. when I entered , I knew what to look for and ask for, very useful. Also there was one hat was drunk room temp. Amerisiski (sic?)

But the one that I loved the most was Excel DaiGinjo. I was there every night and bring people including locals. The owner was very impressed at my tastes and the fact I was bringing people in, the bar is there to open awareness to Japanese Sake. yippie for me!

I am now trying to procure a case from the brewer. This stuff was superb!

HongKong was fun too. I foudn a beerfest while there.. nice pics. i'll try to post,. the beer girls were an eyeful!  ;)

I was brought up to speed on sake by our waiter when we went to Morimoto in Philadelphia.

To get the good sake, you look for ones that are "Junmai" which means they do not add distilled spirits to it.  those 'hot' ones have spirits added, thats why they're harsh tasting.  I've gotten very good junmai sake for dirt cheap too, so price really isn't a factor in that case.

I would rather lick the sake, or at the very least, the sushi, which i got to have for lunch yesterday.
