my favorite baked chicken recipe

This is a recipe I never make quite the same way twice, but here's the gist of it. There's lots of room for experimentation.

4 boneless skinless chicken breasts
1 cup finely diced tomato (drained)
Fresh basil to taste (I use about 10-15 large leaves, but I love basil)
4oz fresh mozzarella

Optional for breading:
1 egg
1/2 cup milk
1 cup flour
1 cup breadcrumbs
1/3 cup vegetable oil

Preheat oven to 350F

Chop mozzarella into small pieces (about the size of crumbled feta).
Mix with diced tomatoes
Chiffonade basil and mix with tomato and cheese mixture

Pound chicken breasts flat to about 1/4" thick.
On each piece of chicken, place 1/4 of the tomato mixture.
Wrap the breast around the filling, secure with toothpicks.

If breading:
Heat oil in pan.
Wisk egg and milk until well combined.
Place flour and breadcrumbs each in a wide, shallow dish
Flour each chicken breast
Dip breasts in the egg wash
Cover each breast in breadcrumbs

Place the folded chicken breasts in a 9x13" baking dish.

Bake at 350F for 35-45 minutes.
Remove toothpicks before serving.

Just realized I missed a step:

After breading, brown each side of the chicken in the oil,about 1 minute

Then place in the baking dish.
